If you’ve been to an Indian restaurant, chances are you’ve been introduced to a variety of North Indian dishes - saag paneer, tandoori chicken, naan, etc. While delicious, these menu items are a very small subset of a diverse food culture across the country of India.
My goal with Oppi’s Veggie Table is to introduce more people to the staples of South Indian cooking.
South Indian vegetarian cooking is based on a variety of different lentil and vegetable dishes, typically eaten with rice or flatbread. These dishes range from simple staple meals like rice with paruppu (mashed lentils flavored with garlic, spices, and herbs), to special occasion dishes such as biryani (a rich flavor infused rice dish). Coincidentally, much of South Indian cuisine happens to be vegan. Many of the dishes are also gluten free.
